Cajun-spiced Prawn & Veggie Stir-Fry

Weekends are for stir-fries! It’s that time when I need to cook whatever veggies are left in my fridge without spending too much time in the kitchen. Total time-saver! Hope you enjoy this easy, quick yet nutrient-dense and delicious dish that is kid-friendly too. You can also sub the prawns with chicken or skip it and make it vegetarian.

INGREDIENTS

200 grams prawns, de-veiled & de-shelled

3 tablespoons olive oil

2 teaspoon cajun spice powder

3 tablespoons olive oil

1 medium onion, sliced

2 cloves garlic, minced

1 medium carrot, sliced

1 cup snow peas, halved

1/2 cup white mushrooms, sliced

1/4 cup raw cashews

Salt & pepper

Coriander leaves

METHOD

In a bowl, mix the cajun spice with the prawns. Let it sit for at least 10 mins.

Meanwhile, lightly toast cashew nuts in a pan for about 3 minutes or so. Set aside.

Add about 2 tablespoons oil in pan. Cook prawns for a few mins then transfer to a bowl. Add the rest of the oil in the pan. Sauté onions and garlic. Add the carrots, cook for about 2-3 mins.

Add the snowpeas, then the mushrooms. Splash a bit of water so the steam cooks the veggies. Season with salt & pepper. Once veggies are cooked, add the prawns and cashews back to the pan. Serve and garnish with coriander leaves.
