In a small bowl, mix all the taco seasoning ingredients and set aside. On a baking tray, arrange the chicken thighs and sliced capsicum, then drizzle with olive oil, and rub both sides of the chicken with the taco seasoning. Sprinkle also some on the capsicums. Bake for 15-18 minutes until browned. Set aside to cool down and then slice the chicken into strips. You can also cook this on stovetop using a skillet or grill pan.
Meanwhile, heat the corn tortillas per package instructions. In a small bowl whisk the yogurt and lime, season with salt and pepper.
To assemble, place lettuce and red cabbage on tortilla, chicken and red capsicums, avocadoes, cherry tomatoes, cilantro, and drizzle with the yogurt-lime sauce.
