Chicken Tacos with Yogurt-Lime Sauce

This chicken tacos is perfect for family dinners. They're easy and quick to make and super flavorful with the tangy yogurt-lime sauce on it.

Ingredients

  • 500 grams chicken thighs
  • 1 tablespoon olive oil
  • 1 red capsicum, sliced
  • 1 lime, juiced

Taco mix

  • 2 teaspoons smoked paprika
  • 2 teaspoons oregano
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Taco sauce

  • 1/4 cup greek yogurt
  • juice of half a lime
  • salt & pepper

To serve

  • mixed lettuce
  • shredded purple cabbage
  • corn tortillas
  • avocado, sliced
  • cherry tomatoes, halved

Instructions

  • Pre-heat oven at 200 degrees Celsius.
  • In a small bowl, mix all the taco seasoning ingredients and set aside. On a baking tray, arrange the chicken thighs and sliced capsicum, then drizzle with olive oil, and rub both sides of the chicken with the taco seasoning. Sprinkle also some on the capsicums. Bake for 15-18 minutes until browned. Set aside to cool down and then slice the chicken into strips. You can also cook this on stovetop using a skillet or grill pan.
  • Meanwhile, heat the corn tortillas per package instructions. In a small bowl whisk the yogurt and lime, season with salt and pepper.
  • To assemble, place lettuce and red cabbage on tortilla, chicken and red capsicums, avocadoes, cherry tomatoes, cilantro, and drizzle with the yogurt-lime sauce.
