An easy, healthy, delicious salmon and mango salad with a sweet, tangy lemon mustard dressing.

Ingredients

cups
mixed lettuce
2
cups
cooked, flaked salmon
1
ripe mango, cut into cubes
1
red onion, chopped
1
cucumber, sliced
1
cup
cherry tomatoes, halved
Dressing
1/3
cup
extra virgin olive oil
1
lemon, juiced & zested
1
teaspoon
dijon mustard
2
teaspoons
pure honey
salt and pepper to taste
Instructions
In a large bowl, arrange the lettuce. Then place on top the chopped veggies and flaked salmon.
In an empty jar, place all ingredients of the salad dressing. Cover with lid and shake the jar until it emulsifies. Taste it and season as you prefer.
Pour the dressing on the salad and enjoy!
Notes
*canned salmon may be used in lieu of fresh cooked salmon
