Apple Almond Coconut Crumble

A healthier twist to the classic apple crumble with oats, almonds, pepitas and coconut.

Ingredients

  • 4 apples 1
  • 1/4 cup fresh orange or apple juice
  • 1 cup rolled oats (grind half of it in a blender to make oat flour)
  • 1/2 cup shredded coconut
  • 1/4 cup almond meal or ground almonds
  • 2 tablespoons pepitas or pumpkin seeds
  • 2 tablespoons coconut oil, melted
  • 1 T pure maple
  • 1 teaspoon vanilla extract
  • 1/4 cup almond flakes
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon ground cinnamon

To serve

  • greek yogurt or vanilla ice cream

Instructions

  • Pre-heat your oven at 180 deg C. Chop the apples in big chunks and place in a bowl. Then pour the juice over it and stir to coat the apples. Then divide the apples among 4 ramekins.
  • In a large bowl, mix all the other ingredients and stir until just combined. It should have a slightly sticky yet crumbly consistency. Scoop the crumble on top of the apples.
  • Bake in the oven for 18-20 minutes or until the top is golden brown and you'll see the sides bubbling from the apples. Let it cool for 5 minutes before serving. Scoop some greek yogurt or vanilla ice cream on top and enjoy!

Notes

These are freezer-friendly and just make sure you cover the ramekins well with foil.  When re-heating, defrost the night before and re-heat in the convection oven.
