Salmon Mango Salad with Lemon Mustard Dressing

An easy, healthy, delicious salmon and mango salad with a sweet, tangy lemon mustard dressing.

Ingredients

  • 4 cups mixed lettuce
  • 2 cups cooked, flaked salmon
  • 1 ripe mango, cut into cubes
  • 1 red onion, chopped
  • 1 cucumber, sliced
  • 1 cup cherry tomatoes, halved

Dressing

  • 1/3 cup extra virgin olive oil
  • 1 lemon, juiced & zested
  • 1 teaspoon dijon mustard
  • 2 teaspoons pure honey
  • salt and pepper to taste

Instructions

  • In a large bowl, arrange the lettuce. Then place on top the chopped veggies and flaked salmon.
  • In an empty jar, place all ingredients of the salad dressing. Cover with lid and shake the jar until it emulsifies. Taste it and season as you prefer.
  • Pour the dressing on the salad and enjoy!

Notes

*canned salmon may be used in lieu of fresh cooked salmon
