If there are two ingredients that absolutely #sparksjoy for me, it has to be dark chocolate and peanut butter. But not just the regular ones, I’m talking about real-good high-quality dark chocolate and all-natural peanut butter with no nasty stuff.
This easy healthy treat is your perfect alternative if you love Reese’s peanut butter cups except for the loads of refined sugar that goes into every bite. I made a big batch of these last weekend and it’s hanging out in my fridge ready to be enjoyed one bite a time. Okay, maybe two. Who am I kidding?
There are only 3 key ingredients: chocolate, peanut butter, chia seeds. But if you opt out the chia seeds, then it really just comes down to two.
So shall we get started?
INGREDIENTS:
200 grams 70-85% high-quality dark chocolateÂ
2 teaspoons coconut oil
1/2 cup all-natural peanut butter
chia seeds, sea salt (optional)
METHOD:
1. Melt the dark chocolate with the coconut oil. Â I usually melt in 20 second intervals in a heat-proof bowl in the microwave. Â You can also use a double-boiler.Â
2. Pour about a tablespoon of the chocolate into your mould. Â I used muffin liners. Â But you can also use chocolate silicone moulds if you have one. Pop into the freezer for 5 minutes to set.
3. Take it out of the freezer. Â Scoop about a teaspoon of peanut-butter in each cup. Â Then sprinkle chia seeds on top. Â And pop again into the freezer to set.
4. Lastly pour the remaining melted dark chocolate into each mould. Â And pop into the freezer one last time to set. Â Sprinkle with some sea salt before devouring.
It takes some waiting with having the chocolate to set, but trust me it’s all worth it!  All-in-all the whole process of making it took me less than 25 minutes.  And 1 minute to eat it!Â
