This delicious, easy 30-minute tacos recipe will be a real treat for you and your family. You can also sneak in lots of veggies in there and the kids won’t even notice. You can make-ahead the beef filling, freeze it, re-heat and then stuff in taco shells for any given meal. How easy can that get? And let’s be honest, there’s never a wrong day to have a taco!
WHAT YOU’LL LOVE ABOUT THIS
First, they have loads of healthy goodness in there. I added diced tomatoes, red kidney beans and carrots. You can also add celery, black beans, and even sweet corn. Then add some herbs like coriander, and fresh lettuce, tomatoes for some added crunch. And oh, avocado can be another option too if you want to take the taste a notch higher. I’ve tried to add guacamole and it’s out-of-this-world delicious!
Second, they can be done in under half an hour. Need I say more?
CAN I USE OTHER MEAT?
I’ve also used turkey and chicken instead of beef and it tastes as delicious. And if you want this to be meat-free you can even sub the minced beef with lentils or vegan mince.

Ingredients
- 500 grams lean minced beef (grass-fed, preferably)
- 1 medium carrot, diced
- 2 tablespoons olive oil
- 1 red onion, chopped
- 2 gloves garlic, minced
- 1 400 grams can red kidney beans, drained and rinsed
- 1 400 grams can diced tomatoes
- 1 teaspoon ground smoked paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- salt and pepper to taste
- 2 tablespoons tomato paste
- 1/3 cup beef broth
To serve
- taco shells, prepared per package instructions
- fresh lettuce
- cherry tomatoes, halved
- coriander
- lime wedges
Instructions
- Heat the oil in a large saucepan or dutch oven. Sauté the garlic and onions. Add the ground beef and cook for about 4-5 minutes until browned.
- Add the carrots and cook for another 2 minutes or so. Then pour the canned tomatoes, tomato paste, broth, and add the seasonings. Bring to a boil and lower heat, then simmer for 15-20 minutes covered.
- Check halfway through, and give it a stir. Add the red kidney beans and continue cooking until all the flavors are well incorporated. Season with salt and pepper as desired.
- Heat your taco shells in your oven. Once warmed, place on a plate and stuff first with some lettuce, then with the beef mixture. Add fresh tomatoes and a squeeze of fresh lime. Enjoy!
