Banana & peanut butter is such a classic combo. And throw in some pecans and cinnamon and it will surely feel like Christmas!
Banana and peanut butter are both staples in my kitchen as well so it was such a no-brainer to have this in oats.
I usually use the quick-easy oatmeal for overnight oats simply because I find them creamier in texture as compared to rolled oats. I’ve tried just adding milk without the yogurt but it’s less creamy in consistency. For vegan options, go for non-dairy milk and coconut yogurt.
WHAT YOU’LL NEED:
- 1/2 cup oats
- 1/2 cup milk of choice
- 1 heaping tablespoon greek or coconut yogurt
- 1 tablespoon unsweetened peanut butter
- 1 tablespoon pure maple or honey
- 1 tablespoon chia seeds
- chopped pecans
- 1/2 banana sliced
- ground cinnamon
Other optional add-ons: sultanas, dark chocolate chips, walnuts
METHOD:
Mix the oats, milk, yogurt, peanut butter, and sweetener in a mason jar. Stir to combine. Top with bananas & pecans and chill in the fridge overnight. In the morning you can add more milk and toppings like granola and more fruits. Make ahead and double the recipe, and store in the fridge for up to 4 days.
