These chicken tacos recipe is one of my go-to family dinners when I want something quick and requires less cooking. I make my homemade taco mix which can be made kid-friendly by putting less chili in it. These tacos are super easy to make but really flavorful in every bite.
To serve, just add fresh lettuce, tomatoes and avocadoes plus a simple yogurt-lime sauce for that tangy finish.

Ingredients
- 500 grams chicken thighs
- 1 tablespoon olive oil
- 1 red capsicum, sliced
- 1 lime, juiced
Taco mix
- 2 teaspoons smoked paprika
- 2 teaspoons oregano
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 2 teaspoons ground cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Taco sauce
- 1/4 cup greek yogurt
- juice of half a lime
- salt & pepper
To serve
- mixed lettuce
- shredded purple cabbage
- corn tortillas
- avocado, sliced
- cherry tomatoes, halved
Instructions
- Pre-heat oven at 200 degrees Celsius.
- In a small bowl, mix all the taco seasoning ingredients and set aside. On a baking tray, arrange the chicken thighs and sliced capsicum, then drizzle with olive oil, and rub both sides of the chicken with the taco seasoning. Sprinkle also some on the capsicums. Bake for 15-18 minutes until browned. Set aside to cool down and then slice the chicken into strips. You can also cook this on stovetop using a skillet or grill pan.
- Meanwhile, heat the corn tortillas per package instructions. In a small bowl whisk the yogurt and lime, season with salt and pepper.
- To assemble, place lettuce and red cabbage on tortilla, chicken and red capsicums, avocadoes, cherry tomatoes, cilantro, and drizzle with the yogurt-lime sauce.
