Don’t you just love the smell of freshly baked muffins in the morning? My little boy loves muffins, bananas, and blueberries and chocolate, so it’s a no-brainer to put these altogether. This one is easy to make and doesn’t require that too many ingredients. It takes me about half an hour or so to prepare everything including the baking time. You can even go crazy on the toppings—from coconut flakes to seeds or even dried fruit, anything can work with banana muffins.
WHAT YOU’LL NEED:
1 c wholemeal flour
½ tsp baking powder
1 egg
1 tsp vanilla extract
3 tbsps greek yogurt
2 ripe bananas, mashed
1/3 c blueberries
1/3 c dark choco chips
pumpkin seeds or dessicated coconut (toppings, optional)
METHOD:
Heat the oven at 180 deg C. Mix the dry ingredients in a bowl. Add in the egg, vanilla extract, yogurt, bananas. Mix with wooden spoon or spatula, but don’t overmix. Add-in the blueberries and dark choco chips. Spoon about 2 tbsps of the batter into each greased muffin cup. Top with coconut or seeds. Bake for about 15 minutes or until golden or a toothpick comes out clean when inserted.
