Our #FFMChristmasSeries continues! And today I’m bringing you this delicious, easy-to-make Chicken Salad Lettuce Boats for a refreshing, healthy light meal or appetizer. This salad is loaded with a mix of veggies–carrots and celery, then dressed with a tangy dijon-mayo combo. The added grapes and apples also balance out the flavors which makes this one of my ultimate fave salad recipes of all time! Scoop it into cos lettuce leaves for a nice touch, or a low-carb option instead of using your usual wheat wraps. So what are you waiting for, go whip this up for your next lunch party!
INGREDIENTS
- 2 cups roasted chicken (or rotisserie chicken), chopped
- 1 cup seedless grapes, halved
- 3-4 stalks celery, chopped
- 1 carrot, chopped
- 1 apple, chopped
- 2 sprigs of spring onions, sliced
- 1/3 cup whole-egg mayo
- 1 tbsp dijon mustard
- 1 tbsp red wine vinegar
- Chopped parsley or basil (optional)
- Salt & pepper
- Squeeze of half lemon
INSTRUCTIONS
In a bowl, combine the chicken, grapes, celery, carrot, apple, spring onions. In a smaller bowl whisk together the mayonnaise, dijon mustard, salt and pepper, apple cider vinegar.
Pour the dressing over the salad ingredients and mix well with a spoon. Add your herbs and mix again.
Prepare your lettuce by washing it and pat-drying with a kitchen towel. To assemble, place the lettuce on a plate then scoop about 2-3 tablespoons of the salad mix on the lettuce. Squeeze with a bit of lemon and enjoy.
