Double Chocolate Banana Muffins

I have a confession.  I’m obsessed with banana muffins these days!  So I whipped up another household favorite and I’m sure these DOUBLE CHOCOLATE BANANA MUFFINS will steal your heart and whet your appetites!   It’s so easy to make and can be done in minutes.   These are made from whole wheat flour, sweetened with coconut sugar and ripe bananas, plus using raw cacao powder which are absolutely wonderful for your health.  Studies show that incorporating good quality, unprocessed chocolate will help build up your immunity, fight off toxins, and of course, to boost your mood!

They are perfect for breakfast or for a quick healthy snack for you and your little ones.  I usually bake a big batch of muffins on weekends, freeze half of those so they are ready for busy mornings where you don’t have time to cook.  Make sure you defrost them the night before and do not re-freeze.

These muffins are delicious and you can choose to add chocolate chips, nuts, or even dried fruit to fancy them up.

WHAT YOU’LL NEED

1 1/3 cup wholemeal flour

1/2 cup coconut sugar

1/4 cup cacao or unsweetened cocoa

1 tsp baking soda

1/4 tsp baking powder

1/2 tsp ground cinnamon

1/2 tsp salt

2 large bananas mashed (about 1 1/3 cup)

1/3 cup coconut oil, melted

1/3 cup pure maple or honey

1 egg

1 teaspoon vanilla extract

1/3 cup dark chocolate chips, nuts like pecans or walnuts

METHOD

Pre-heat oven at 350 degrees F.   Line a muffin tray with liners.

In a medium bowl, mix the flour, coconut sugar, raw cacao, baking soda, baking powder, ground cinnamon, salt.

In a larger bowl, mash the bananas and mix with the melted coconut oil, egg, pure maple or honey, vanilla extract until smooth.  Add the dry mixture into the bowl and mix until well combined.  Don’t over-mix as that would give you dense muffins.  Fold in your chocolate chips or nuts if using.

Scoop about 2 tablespoons of mixture into each muffin mold.  Bake for about 12-15 minutes or until a toothpick comes out clean.
