Healthy Chocolate Chip Oat Cookies

Chewy, chocolatey oatmeal cookies that are free of white flours and refined sugars. Perfect for a quick snack or when a sweet craving strikes!

Is there really such a thing as a healthy chocolate chip cookie? Well, well, well…I am here to tell you that there actually is! And it all starts with the ingredients you use. This chocolate chip cookie is made of 100% oat flour, that is, ground rolled oats! It couldn’t get healthier than that, right? It’s also sweetened with coconut sugar so there is no nasty refined stuff in there. And instead of butter, it uses coconut oil. Yum!

Theo loves baking cookies with me and it’s actually a great bonding experience for moms and tots. Forget about the mess, and think of the lovely memories you will create with your little ones which you will one day look back to with a smile. Don’t forget to take photos or videos while you’re at it!

Make these cookies for Valentines’ Day and gift your loved ones with the healthiest, most delicious home-made treats! Or, you can also try these CHOCO CHIP BANANA COOKIES which my boys also love.

INGREDIENTS

2/3 cup plus 1/2 cup oat flour  (ground oats)

1/4 tsp salt

1/2 tsp baking soda

5 tablespoons coconut sugar (or brown sugar)

1 teaspoon pure vanilla extract

2 tablespoons melted coconut oil

3 tablespoons milk of choice, or more 

1/3 cup dark chocolate chips

METHOD

Pre-heat oven to 375 degrees.  Line a cookie sheet with parchment paper or silicone mat. 

In a bowl, mix the dry ingredients.  Then in another bowl mix the wet ingredients.  Add the dry into the wet, mix until well incorporated.  Fold in chocolate chips.  

Make into a large ball.  Then scoop about a tablespoon and form into a small ball with palms.  Or if you have an ice cream scoop you can also use that.   

Place cookie ball doughs on the mat and flatten with a fork.   Bake for about 9-11 minutes.  I try to underbake it and then let it sit on the mat for about 10 minutes (outside the oven), to let it continue to bake.  

Store in a glass container or any air-tight container.  Enjoy with some milk or tea!
