This sweet, tangy salmon and mango salad is the perfect centerpiece in your dinner table. It comes with a lemon mustard dressing which adds to the richness of this simple, healthy dish. Double the recipe if you are bringing this to a party and make extra dressing too.
I just love salads! It requires less cooking, so it makes it the best healthy meal if you’re a busy mom like me. I used to think salads are bland, but ever since I experimented on flavors and ingredients, I always try to think of ways to jazz up a bowl. And every time we have gatherings here in Melbourne, I usually bring a salad bowl to complement the spread of meaty dishes which is typical of any Filipino party. This salad happens to be one of those which gets rave reviews from friends!
HOW TO MAKE THIS SALMON AND MANGO SALAD:
USE FRESH INGREDIENTS.
I can’t emphasize enough how important it is to use fresh produce. For the salmon, it’s best to buy a fillet or two and just pan-fry it or bake it with salt and pepper. Otherwise, you can sub it with canned salmon, but the taste wouldn’t be as rich as when cooked fresh. I usually make my salads on the day or the day I buy my ingredients to make sure they are super fresh.
RIPE MANGOES AND TOMATOES.
The riper the mangoes and tomatoes, the better. It blends perfectly with the salty, fatty taste of the salmon. For the tomatoes, it’s best to buy them organic since tomatoes are known to be in the DIRTY DOZEN which has the highest pesticide residue. If you can’t get them organic, just soak them with water for 5 minutes and rinse thoroughly.
KILLER DRESSING.
The dressing is always a game changer in any salad. I have been making my own dressing for the last 3 years and I’ve never looked back. I make a big batch of dressing and store it in a jar with lid and keep it in my fridge. Not only is it cheaper, it’s also more flavorful and healthier with no chemical preservatives unlike store-bought ones.
A key tip to make a really exceptional dressing is the quality of ingredients starting with your extra-virgin olive oil. So make sure you pick a really good one! And if you bring this in a party, you can just add the dressing right before it gets served.
Now let’s make some yummy salad!
Ingredients
- 4 cups mixed lettuce
- 2 cups cooked, flaked salmon
- 1 ripe mango, cut into cubes
- 1 red onion, chopped
- 1 cucumber, sliced
- 1 cup cherry tomatoes, halved
Dressing
- 1/3 cup extra virgin olive oil
- 1 lemon, juiced & zested
- 1 teaspoon dijon mustard
- 2 teaspoons pure honey
- salt and pepper to taste
Instructions
- In a large bowl, arrange the lettuce. Then place on top the chopped veggies and flaked salmon.
- In an empty jar, place all ingredients of the salad dressing. Cover with lid and shake the jar until it emulsifies. Taste it and season as you prefer.
- Pour the dressing on the salad and enjoy!
